Fried bee hoon
Ingredients: (serves 4-5 persons) |

1 packet bee
hoon |
|
|
1 tablespoon
oil |
| |
Chopped onion,
spring onion and red chilli (for garnishing),
as required |
| |
4-5 cloves of garlic,
chopped |
| |
300 g chicken breast
meat |
| |
Chopped cabbage
as required |
| |
Bean sprouts as
required |
| |
Sauce mixture:
1 tablespoon black sauce, 1 teaspoon soya sauce,
a little sesame oil, salt and pepper, 2 tablespoons
water |

| Cooking method: |

Soak
bee hoon for 10 mins till soft. |

Pour
the oil into casserole, add the chopped onions
and place in the microwave oven till
brown (to be used for garnishing). Remove
onions and keep in a separate dish. |

Add
the chopped garlic to the remaining oil and
place in microwave oven for
1½ mins. |

Add
300 g of chicken breast meat to the garlic,
cook in microwave oven for
1½ mins. |

Take
chicken out of microwave oven. |

Add
chopped cabbage, soaked bee hoon and bean
sprouts. |

Add
sauce mixture and mix it into the bee hoon. |

Put
casserole into microwave oven. After 2 mins,
take it out of the oven and stir
contents. (If bee hoon is too dry, add a
little water.)
Put casserole back into the oven for another 1 min. |

Add
chopped spring onion, red chilli for colour,
and put casserole back into microwave
oven for another 10 secs. |

Garnish
with fried onion. |

Ma-poh tofu
Ingredients: (serves 4 persons) |

1 tablespoon
oil |
|
|
3 cloves
garlic, chopped |
| |
5 shallots, chopped |
| |
300 g chicken breast
meat, cubed |
| |
2 tablespoons Szechuan
paste |
| |
1 tray silken tofu,
cubed |
| |
½ teaspoon
salt |
| |
1½ teaspoons
cornflour, mixed with water |
| |
Chopped spring
onion and red chilli, as required |

| Cooking
method: |

Mix
chopped garlic and onion in oil, brown in
microwave
oven for 1½ mins. |

Add chicken
cubes, leave uncovered in microwave oven for
3 mins. |

Mix 2 tablespoons of
Szechuan paste and cubed tofu. Cook in microwave
oven
for 2 mins. |

Sprinkle ½ teaspoon
of salt. |

Mix
1½ teaspoons
of cornflour with water, stir into the tofu. |

Add
chopped spring onion and red chilli, cook
for ½ min. |

Autumn fruit salad
Ingredients: (serves 5 persons) |

2 tablespoons
honey |
|
|
2 tablespoons
lemon juice |
| |
2 Granny Smith (green)
apples, cubed |
| |
2 red pears, cubed |
| |
½ cup
dried apricots, sliced into thin strips |
| |
3 8-oz (240-ml) containers
low-fat spiced apple yoghurt or
low-fat vanilla yoghurt |

| Cooking
method: |

Whisk honey
and lemon juice together in a medium bowl. |
|

Add fruits
and toss well. |

For
each person, spoon a half container of yoghurt
into a small bowl
and top
with ½ cup of fruits. |

Salad is ready for serving. |
